The invention relates to a method of packaging raw fish comprising the following steps: a) preparation of the raw fish including at least one cleaning step of said raw fish, b) introduction of the prepared raw fish obtained in step a) into an envelope a cylindrical, longitudinally elongate, longitudinally extending bar, forming a prepared and wrapped raw fish bar, within which the fish density is between 0.9 kilograms per liter and 1.15 kilograms per liter; kilogram per liter; and, e) final packaging of the fish in a canning casing, said temporary casing being distinct from the casing casing.
